In Britain when we buy a beef brisket it will usually be the Flat Cut, which is delicious cooked low-and-slow on the BBQ and served sliced. But this video concentrates on the fattier Point Cut of the brisket (the Deckle) and walks us through the cooking process to turn it into delicious Kansas City style Burnt Ends. Cubes of succulent beef, each with a smokey bark and caramelised in tangy BBQ sauce. It's not a quick cook but is SO worth it!

Lamb steaks cooked directly on the barbecue coals, a technique known as 'dirty BBQ' but in fact it's nothing of the sort. The meat doesn't pick up any grit, just a delicious smokey flavour! Carved and served in a chargrilled wrap with some mixed leaves, middle eastern seasoning and a drizzle of pomegranate molasses. This one has got to be tried!
