Dirty BBQ Lamb Steak Wraps


  • A lamb steak per person

  • A chargrilled wrap per person
  • Mixed lettuce leaves
  • Seasoning - try middle eastern spices like Ras el Hanout and/or sumac
  • Pomegranate molasses


  • On your charcoal barbecue, let the coals burn down until they are all grey, blow off any excess ash
  • Place the lamb steaks directly onto the coals and leave them there - don't touch them until they are ready to turn over (about 5 minutes)
  • Turn the steaks over and brush off any coals that have stuck to the meat
  • Cook for about another 5 minutes
  • Remove from the coals and leave to rest for a few minutes
  • Carve into 0.5-1cm slices 
  • Build each wrap with a layer of leaves topeed with sliced lamb. Sprinkle on some seasoning and drizzle with pomegranate molasses
  • Wrap and enjoy!
