Caribbean Spiced Pineapple


  • 1 large pineapple sliced into 8 rings 
  • 4tbsp dark brown sugar
  • 1tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground cloves
  • 4tbsp rum
  • Vanilla ice cream to serve


  • Mix the sugar and spices together in a bowl
  • Lay the pineapple rings in a flat glass dish
  • Sprinkle both sides generously with the spice mix
  • Pour over the rum
  • Cover and leave in the fridge for at least an hour, preferably overnight, turning once
  • Grill over a direct medium/low heat for about 5 mins each side (until they are caremalised but not burnt)
  • Serve with a scoop of ice cream and drizzle over the leftover rum juices from the dish
