Halloumi kebabs

Ingredients (makes approx 4 - 6 kebabs)

  • 1/2 cup (120 ml) olive oil
  • 2 cloves garlic
  • 1 Tblsp chopped fresh oregano leaves (or 1 1/2 - 2 tsp dried oregano)
  • 1 red onion
  • 1 sweet bell pepper  (yellow, orange or red)
  • 1 courgette
  • 1 block halloumi cheese
  • 12 wooden kebab skewers (soaked in water for at least 30 mins)
  • Fat Daniel's Dixie Dust for seasoning


  • Cut the courgette into rounds approximatey as long as they are thick
  • Using the courgette as a guide for size, cut the cheese into cubes
  • Cut the onion & pepper into squares of the same size as the sides of the cheese cubes

  • With the BBQ lit, place a pan directly onto the grates of BBQ
  • Add the oil to the pan
  • Crush the garlic into the oil and add the chopped oregano
  • Allow the oil to infuse the flavours of the garlic and herbs - Do NOT cook/colour the garlic
  • When the oil in the pan smells fragrant, remove the pan from the heat and allow to cool

  • Build the kebabs by threading the ingredients onto skewers
  • Generously brush the kebabs with the infused oil 
  • Liberally season the kebabs with Fat Daniel's Dixie Dust
  • Place the kebabs on the BBQ & grill on each side until a rich golden brown
  • Brush the kebabs with the oil after each turn
  • Serve and receive plaudits from your guests ;-)
